More often than not, that meal included his Easy Fried Rice Recipe, smothered in Yum Yum sauce, and sometimes they turned it into full-on Steak and Shrimp Hibachi. To this day, his boys still request this dish because it holds so many core memories.

What is Fried Rice?

Fried rice is a versatile dish that originated in China. It consists of cooked rice stir-fried in a wok or, in this case, on a flat top grill. It is usually mixed with eggs, vegetables, meat, or seafood. This is a staple in many Asian cuisines, and on a Coyote flat top grill, it becomes an interactive, entertaining-friendly meal that brings everyone around the cooking surface.

Tim's Easy Fried Rice

Ingredients

  • 8 Cups White Rice (day old is best)
  • 2 Eggs
  • 3 tablespoons Butter
  • ½ Onion, yellow or white
  • 4 Cloves Garlic
  • 1 Cup Peas and Carrots, frozen mix
  • Avocado Oil
  • Salt & Pepper
  • Sesame Seeds
  • 1½ teaspoon Sesame Oil
  • 4 tablespoons Smoked Soy Sauce
  • 3 Scallions

Instructions

  1. Prep the veggies by dicing the onions and scallions and mincing the garlic.
  2. Heat the flat top to medium heat and add a drizzle of avocado oil, and cook onions on one side until soft and slightly golden.
  3. Break up the day-old rice using your hands. Add a little more avocado oil to the griddle and spread out the day-old rice into a thin layer, and let it cook undisturbed until it forms a light crust. Then flip and crisp the other side.
  4. Combine onions, garlic, and rice together.
  5. Cook peas and carrots to the side with a small splash of oil. Cook until warmed through and mix into the rice.
  6. Scramble the eggs separately on a clean spot of the flat top. Chop and scramble into bite-sized pieces, then mix into the rice.
  7. Quick sauté the garlic with a touch of oil for about 60 seconds (just until fragrant, careful not to let it burn). Mix it into the rice.
  8. Season and finish by adding butter and tossing until melted. Drizzle in smoked soy sauce and sesame oil. Toss until evenly coated.
  9. Top and serve by finishing with sesame seeds and scallion greens. Serve hot for results.
