  • 2 tbsp extra virgin olive oil
  • Salt & pepper to taste
  • Fresh lemon juice
  • Wooden or metal skewers (soak wooden ones in water for 20 mins)

Instructions

  1. Skewer the shrimp (4-5 per stick).
  2. Drizzle with olive oil and lemon juice, and then season with salt, pepper, and parsley.
  3. Grill on medium-high heat (about 2-3 minutes per side) until shrimp turn pink and slightly charred.
  4. Serve immediately with lemon wedges!

Whipped Ricotta Crostinis

Ingredients

  • 1 French baguette, sliced into ½-inch pieces
  • 1 cup whole-milk ricotta cheese
  • 1 tbsp extra virgin olive oil (+ more for drizzling)
  • 1 lemon (juiced)
  • 1 cup cherry tomatoes
  • Salt to taste
  • Fresh parsley, chopped

Instructions

  1. Make the whipped ricotta: In a bowl, mix ricotta, lemon juice, olive oil, and salt. Whip until smooth.
  2. Grill the bread & tomatoes:
  3. Brush baguette slices with olive oil and sprinkle with salt.
  4. Toss cherry tomatoes in olive oil.
  5. Grill bread until golden (1-2 mins per side).
  6. Grill tomatoes until blistered (3-4 mins).
  7. Assemble: Spread ricotta on crostini, top with roasted tomatoes, and garnish with parsley!

Ingredients

  • 1 bottle of your favorite wine (Melissa used cabernet)
  • 1 cup of orange liqueur 
  • 1/2 cup of brandy
  • 3 to 4 cups of ginger ale
  • Half of a sliced apple
  • 2 to 3 orange slices

Instructions

  1. Combine all of your liquids into the pitcher.
  2. Slice up your fruits and add them to the mix.
  3. Put some ice in your wine glass and pour in the Sangria!
